PEANUT BRITTLE | |
2 c. sugar 1 c. white Karo syrup 2/3 c. water 1 lb. roasted, salted Virginia peanuts 1 tsp. baking soda Combine sugar, Karo, and water in pan. Cook to 290 degrees or hard crack. While cooking, roll nuts to split them. Grease 2 cooking sheets with butter. Measure 1 teaspoon baking soda. Set aside. When syrup reaches 290 degrees, put in broken nuts and stir. This will become a glob but will thin as it heats. Stir continually until nuts and syrup become a golden brown. Remove from fire; add soda. The candy will foam. Pour immediately on cookie sheets. Break down foam, spreading candy to desired thickness; cool. Break and store in closed container. Note: Use wooden spoon to stir while on fire! |
