PINEAPPLE MOUSSE 
2 env. unflavored gelatin
1 1/2 c. evaporated skim milk
1 1/2 c. water, divided
1/2 tsp. coconut extract
1/4 tsp. vanilla extract
Sugar substitute to equal 5 tsp. sugar
1 1/2 c. crushed pineapple, in own juice, include the juice
Strawberry halves for decoration, optional

In a medium saucepan sprinkle gelatin over 1 cup of water; heat, stirring until gelatin mixture is dissolved. Pour the mixture into the blender; add the remaining water, milk, extracts and sugar substitute. Whip at low speed until smooth. Add pineapple; process at medium speed until smooth. Pour into 1 1/2 quart mold. Chill. Garnish with strawberry halves, if desired.
