FRESH FRUIT WITH STRAWBERRY
MOUSSE
 
2/3 c. packed, fresh or frozen unsweetened strawberries, thawed if frozen
1/4 - 1/2 tsp. sugar (to taste)
2/3 c. non-dairy whipped topping

FRUIT:

8 (1") pineapple cubes, fresh or canned (about 2/3 c.)
1 kiwi fruit, peeled & cut into 8 pieces
8 navel orange segments
8 strawberries, hulled

Place 4 dessert plates in freezer for 30 minutes. Puree the strawberries in a blender or food processor. Sweeten as needed to suit your taste. Fold in whipped topping. Divide the mousse among the 4 chilled dessert plates.

Carefully arrange 2 pieces each of pineapple, kiwi, orange and strawberry on each plate and serve at once.

Serves 4.
