BLUEBERRY-RHUBARB CRUMBLE | |
1 1/2 c. rolled oats 2/3 c. brown sugar 1/2 c. flour 1/2 c. butter 3 c. fresh or frozen blueberries 2 c. rhubarb, cut sm. 1/2 c. sugar 2 tbsp. flour Mix oats, brown sugar, 1/2 cup flour and 1/2 cup butter until mixture looks like coarse crumbs. Reserve 2/3 cup for top. Pat remaining mixture into 9"x9" baking dish. Bake at 350 degrees for 10 to 15 minutes until brown. Combine berries, rhubarb, 1/2 cup sugar and 2 tablespoons flour to coat well. Spoon berry mixture over crust. Sprinkle with reserved topping. Bake for another 45 to 50 minutes or until golden brown. Serve warm with whipped cream. |
