PEACH PIE 
Makes 1 (9") pie.

CRUMB TOPPING:

3 tbsp. butter
1 c. sugar
1/4 c. chopped almonds
4 tbsp. all purpose flour

PIE:

1 (9") pie crust
4-5 c. fresh sliced peaches
1/2 tsp. almond extract

Preheat oven to 425 degrees. Mix ingredients for crumb topping. Pour half of the crumb topping into the pie crust. Mix almond extract to the peaches and add this mixture to the pie. Top with the remaining crumb mixture. Bake for 15 minutes; reduce heat to 350 degrees and bake for 30 minutes more.
