BANANA NUT MUFFINS 
1/2 c. butter, softened
1 tsp. vanilla
1 3/4 c. flour
Scant tsp. cinnamon
4 bananas, very ripe, mashed
1 1/4 c. sugar
2 eggs
1 tsp. baking soda
4 tbsp. buttermilk
3/4 c. chopped pecans

Preheat oven to 350 degrees. Grease muffin pans, then dust with flour (or use paper baking cups. Cream butter until fluffy. Add eggs one at a time. Beat well after each addition.

Mix flour, soda, and cinnamon (all sifted together). Add alternately with buttermilk. Blend in bananas and nuts. Bake until done. Makes 2 dozen.
