BANANA NUT MUFFINS 
1/2 c. shortening or butter
1 c. sugar
2 eggs
4 bananas, mashed
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 c. chopped nuts

Cream shortening, sugar and eggs; add bananas. Sift flour and dry ingredients. Add to creamed mixture. Add nuts and vanilla. Bake in greased large or mini muffin tins. Bake at 400 degrees for 15-20 minutes or 12-15 minutes for minis.
