CHOCOLATE MOUSSE 
4 eggs, separated
1/4 c. sugar
2 tbsp. Grand Marnier
3 tbsp. strong coffee (1/2 tsp. instant coffee with 3 tbsp. water)
1 stick butter, soft
6 oz. chocolate, cut up
1 c. heavy cream

Beat egg yolks, sugar and Grand Marnier until thick. Melt chocolate with coffee over low heat until melted. Remove from heat and add butter, bit by bit until incorporated. Let cool, add to yolk mixture.

In separate bowl, beat egg whites until stiff peaks. Mix a portion of whites into yolk mixture. Fold in the rest. Beat cream until thick and add 1/2 to chocolate mixture. Beat remaining cream to thick whipped cream to decorate mousse.
