1/2 c. butter
1 c. sugar
2 eggs, separated
2 c. sifted flour
4 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 c. milk

Recipe may be doubled for tube pan.

Cream shortening and sugar until fluffy. Beat egg yolks until light. Add to creamed mixture with vanilla, beating well. Sift flour, salt, and baking powder; add to creamed batter alternately with milk. Beat egg whites and fold in. Pour into well greased and floured loaf pan. Top with 3 tablespoons sugar and 2 teaspoons cinnamon. Dot with 2 tablespoons butter, cut into squares. Place in 500 degrees oven for 1-2 minutes. Reduce to 375 degrees and bake 50 minutes or until done.
