VEGETABLE CASSEROLE 
5 or 6 summer squash or zucchini
1 onion
1 can cream of chicken soup
1 lg. box stuffing mix (any kind)
1/2 c. sour cream

Cut up squash and onions and cook until tender, drain and mash. Mix squash and onion with sour cream and cream of chicken soup. Mix stuffing according to package. Put half of stuffing in bottom of 9"x13" baking pan. Put squash mixture on top of stuffing and top with rest of stuffing. Bake at 400 degrees for 40 minutes.
