DUTCH ISLAND DOUGHNUTS 
12 oz. flour (about 4 1/4 c.)
3 tsp. baking powder
Pinch salt
1/2 tsp. ground cinnamon
1/4 tsp. grated nutmeg
3 c. dark brown sugar
2 whole eggs, beaten
1 egg yolk
2 oz. butter, melted
3/4 c. milk

Sift flour with baking powder, salt, cinnamon and nutmeg; mix in sugar. Add eggs slowly, beating lightly, then the melted butter and enough milk to make a pliable dough which is easy to handle.

Flour a board and roll dough out into a thin oblong. Cut into 1 1/2-2 inch wide strips, and cut each strip into 3 1/2 inch sections. Make a slit 1 inch from one end of each strip and pull the opposite end through. Fry quickly in hot fat or oil until golden brown (3-4 minutes). Drain on paper toweling. Dust with powdered sugar. Makes about 20.
