LEMON BUTTER DRENCHED SCAMPI 
Microwave
1 lb. lg. raw shrimp
1/4 c. butter
1 garlic clove, minced
2 tbsp. lemon juice
1 tbsp. minced parsley
1/8 tsp. pepper

Peel clean, and remove vein on shrimp. Split along back curve, cutting deep. Open, lay out flat, butterfly style. In glass dish, melt butter on high 40 to 60 seconds. Add remaining ingredients. Stir well to coat shrimp. Cook on high for 1 minute. Stir then cook another 1 1/2 to 2 minutes. Serve immediately. Makes 2 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
