LEO'S RICE PILAF 
1 med. onion, chopped
1 (4 oz.) can mushrooms, stems & pieces, not drained
1/4 c. chopped parsley
2 stalks celery, chopped
1 clove garlic, chopped
1/2 c. butter
1 c. rice (UNCLE BEN'S® converted)
2 c. water
2 beef bouillon cubes

Boil 2 cups water and dissolve bouillon cubes. Set aside. Saute all of the vegetables in the 1/2 cup butter. Add the bouillon/water and rice. Bring to a boil, then simmer until rice is cooked.
