PARKER HOUSE ROLLS 
1 c. boiling water
1/2 c. shortening
1/2 c. sugar

1 pkg. yeast in 1 c. lukewarm water

Beat 2 eggs until light. mix all together.

6 to 6 1/2 c. flour
1 1/2 tsp. salt

Mix and knead well. Dough should be slightly sticky, but smooth on the outside. Put in greased bowl. Turn dough so all is greased. Cover and let rise about 1 1/2 hours. Punch down, turn and return to covered bowl.

Let rise to double original bulk. Knead. Cover and let stand for 10 minutes. Roll, cut, dip one side in melted butter. Fold, place on greased pan about 1 inch apart. Let stand covered with damp towel until double in size. Bake at 375 degrees for 10 to 12 minutes or until brown. Makes 4 1/2 dozen.
