BETTY'S LEMON REFRIGERATOR CAKE 
1 1/2 tbsp. gelatin
1/3 c. cold water
6 egg yolks
3/4 c. lemon juice
3/4 c. sugar
1 tbsp. grated lemon rind
6 egg whites
3/4 tsp. salt
3/4 c. granulated sugar
2 pkg. lady fingers
Coconut
Cream

Soften gelatin in water in a separate pan. Beat egg yolks with lemon juice. Stir in 3/4 cup sugar. Cook until mixture coats spoon. Remove from heat. Stir in gelatin and lemon rind.

Beat whites and salt until stiff. Add sugar. Fold in cool lemon mixture. Line bottom and sides of springform pan with lady fingers. Top with whipped cream and toasted coconut.
