MOCK CHOCOLATE ECLAIR 
1 lb. graham crackers
2 sm. instant vanilla pudding
3 1/2 c. milk
1 (8 oz.) Cool Whip

Make the pudding and mix it with the Cool Whip. Butter the bottom of a 9x13 baking dish. Starting with crackers on the bottom, alternate layers of crackers and pudding mixture as follows. Crackers, pudding, crackers, pudding, crackers. End with the crackers on top and top with chocolate frosting listed below.

FROSTING:

2 sq. unsweetened chocolate
2 tsp. Karo syrup
2 tsp. vanilla
4 tbsp. butter
1 1/2 c. powdered sugar
3 tsp. milk

Melt while stirring until all butter and chocolate is melted and a smooth consistency. Pour and spread over the top.
