PEA SALAD 
10 oz. pkg. petite peas
1 red onion, sliced
3 tbsp. mint crumbled
1 tbsp. honey
1/4 c. oil
1 tsp. salt

Combine peas and onion. Mix together next 4 ingredients, pour over peas. Mix well and let stand overnight. When ready to serve, add 6 slices cooked and crumbled bacon, chopped; cashews, 2 tablespoons white wine vinegar and 1/2 of a small carton of sour cream.

Mix well and serve immediately.
