CHICKEN TORTILLA PIE 
2 tbsp. oil
1 med. onion, diced
1 med. green pepper, diced
2 chicken breasts, cut in 1/2-inch pieces
1/2 tsp. chili powder
1 (8 oz.) bottle taco sauce
2 tbsp. chopped green chilies
3 (8 inch) flour tortillas
1/4 lb. grated Monterey Jack cheese

Cook onion and pepper in oil for 5 minutes. Add cooked chicken pieces and chili powder and cook for 5 minutes. Add taco sauce and green chilies and simmer for 10 minutes.

Preheat oven to 350 degrees and bake tortillas o cookie sheets until crisp. Assemble mixture by placing chicken mixture and cheese on tortilla. Repeat layering. Bake for 10 minutes or until cheese melts.
