MAPLE-BACON OVEN PANCAKES 
1 1/2 c. biscuit mix
1 tbsp. sugar
2 eggs
3/4 c. milk
1/4 c. maple-flavored syrup
1 1/2 c. shredded Cheddar cheese
12 slices bacon, crisply fried and crumbled

Heat oven to 425 degrees. Grease and flour 9x13x2 inch baking dish. Beat biscuit mix, sugar, eggs, milk, syrup and 1/2 cup cheese with hand beater until smooth. Pour into dish. Bake uncovered until toothpick comes out clean when inserted in center, approximately 10-15 minutes.

Sprinkle pancake with remaining cheese and the bacon. Bake uncovered until cheese is melted, 3-5 minutes longer. Serve with maple-flavored syrup. Makes 12 servings.
