1 c. butter (softened) 1/3 c. sifted powdered sugar 1 1/4 c. all purpose flour 1/2 c. corn starch LEMON FROSTING: 1/4 c. butter (softened) 1 1/2 c. sifted powdered sugar 2 tbsp. lemon juice 1 tbsp. grated lemon rind Cream butter and sugar well. Gradually add flour and corn starch and beat until smooth. Drop by tablespoon onto ungreased cookie sheet. Bake at 350 degrees for 10 to 12 minutes (cookies do not brown on top). Cool slightly on cookie sheet, remove cookies to wire rack to cool completely. Frost with lemon frosting. Yields about 9 dozen. Lemon Frosting: Cream butter, gradually add sugar and lemon juice and beat until smooth. Stir in lemon rind and frost cookies. |
