LEMON GLAZED POTATOES | |
1 1/2 lbs. sm. potatoes, peeled 3 oz. butter 1 tbsp. light brown sugar 1 sm. onion, finely chopped 1 tbsp. lemon rind 2 tbsp. lemon juice Salt and pepper to taste Parsley, chopped Chives, sliced Place potatoes in a large pot. Cover with water and bring to a boil. Cook for 3 minutes and drain potatoes. Saute onion in butter and place in a baking dish. Add sugar, lemon rind, lemon juice, and salt and pepper to taste. Stir until sugar is dissolved. Add potatoes to lemon mixture and toss well. Bake in oven at 350 degrees about 45 minutes until top is golden brown. Garnish with parsley and chives. Serves: 4. |
