POTATO SALAD 
4 c. dehydrated potatoes
1 c. diced celery
3 boiled eggs, diced
1 tbsp. onion
1 qt. Miracle Whip salad dressing
3/4 c. sugar
2 tsp. mustard
salt and pepper to taste
celery salt to taste

Add potatoes to boiling water and cook about 8 minutes. Put in strainer and rinse with cold water. Drain well.

Mix salad dressing, sugar and mustard; let stand 15 minutes. Mix again. Mix with potatoes, celery, eggs and onion. Add salt, pepper and celery salt.

Serves about 25 people. This makes about 5 pounds.

If you desire a darker dressing, add a little yellow food coloring.
