RHUBARB MUFFINS 
1 1/4 c. brown sugar
1/2 c. oil
1 egg
1 c. buttermilk
2 tsp. vanilla
1 1/2 to 2 c. rhubarb
1/2 c. nuts
2 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt

Mix first 5 ingredients together - beat well. Add - rhubarb and nuts. Bake at 375 degrees for 20-25 minutes.
