CHINESE CASSEROLE CASHEW CRUNCH 
1 lb. ground turkey (or beef) or cooked chicken
1 med. onion, chopped
1 c. chopped green pepper
8 oz. wide egg noodles, cooked
1/2 lb. Velveeta cheese, diced
1 can cream mushroom soup (10 oz.)
3/4 c. milk
1 c. stems and pieces mushrooms
1 1/2 tsp. salt
1/2 tsp. pepper

TOPPING:

1 c. cashews (unsalted)
1 sm. pkg. chow mein noodles

In a large skillet, or Dutch oven, brown meat (or heat chicken) drain any grease. Add onions and green pepper and cook until tender. Add other ingredients and mix. Place in two greased 1 1/2 quart baking dishes or one 9 by 13 inch greased baking pan. Bake, covered, at 350 degrees for 45 minutes. Uncover, top with cashews and noodles. Bake an additional 15 minutes. Serves 8 to 12.
