MEXICAN FRUIT CAKE 
2 tsp. baking soda
2 c. flour
2 c. sugar
2 eggs or 1 carton scramblers
1 c. pecans
1 (20 oz.) can crushed pineapple, undrained

Pour pineapple in large bowl and add all other ingredients. Pour into greased and floured 13 x 9 x 2 inch pan and bake at 350 degrees for 45 minutes. Cool. Then cover with cream cheese frosting.

CREAM CHEESE FROSTING:

2 c. powdered sugar
1 stick butter, soft
1 pkg. (8 oz.) cream cheese
1 tsp. vanilla

Blend well.
