CHICKEN AND CHEESE 
2 boned and skinned chicken breasts, cut in half
2 well beaten eggs
1 c. bread crumbs
4 tbsp. butter
1 c. chicken broth
1/2 lb. sliced mushrooms
1 pkg. Muenster cheese
Salt to taste
2 tbsp. lemon juice

Season with salt and stand in egg for 1 hour. Dredge in bread crumbs and roll up. Brown in melted butter. Place in baking dish. Sprinkle with lemon juice and cover with chicken broth, mushrooms and Muenster cheese. Bake in 350 degree oven for 1/2 hour. Serves 4.
