NO - CHOLESTEROL APPLE CAKE | |
Non-stick spray coating 2/3 c. sugar 1/2 c. packed brown sugar 1/4 c. vegetable oil 3 egg whites 2/3 c. all purpose flour 2/3 c. whole wheat flour 1/2 c. oat bran 1 1/2 tsp. baking soda 1 tsp. ground cinnamon 1/4 tsp. ground all spice or nutmeg 3 c. shredded, unpeeled apples Powdered sugar Spray a 13 x 9 x 2 inch baking pan with non-stick coating; set aside. In a large mixing bowl, combine sugars, oil, and egg whites. Beat with a wooden spoon until well blended. Add flours, oat bran, baking soda, cinnamon, and allspice or nutmeg; stir just until moistened. Stir in shredded apples. Pour batter into prepared pan. Bake in a 350 degree oven for 25 to 30 minutes. Cool. If desired, sift powdered sugar atop cake. Makes 16 servings. 147 calories, 2 grams protein, 4 grams fat, 0 milligrams cholesterol, 1, 057 milligrams sodium, 100 milligrams potassium, 2 grams dietary fiber. |
