PORCUPINE MEAT BALLS 
1 can tomato soup
1/4 c. uncooked rice
1/4 c. minced onions
1 tsp. salt
1 c. water
1 lb. ground beef
1 egg, slightly beaten
2 tbsp. parsley
2 tbsp. shortening

Mix 1/4 cup soup with beef, rice, egg, onion and salt. Shape into balls (16). Brown meat balls in shortening in skillet. Blend in remaining soup and water. Cover, simmer 40 minutes or until rice is tender - stir often. Serves 4.
