CHRISTMAS FRUITCAKE COOKIES 
1/2 c. brown sugar
1/2 c. snipped dried apricots
1/2 tsp. baking powder
1/2 c. raisins (dark or golden)
1/4 tsp. ground allspice
3/4 tsp. cardamom (may substitute cinnamon)
1 1/4 c. whole wheat flour
1 egg
1/2 c. vegetable oil
1/4 tsp. ground cloves
1/4 c. milk
1/2 c. chopped pecans
1 tsp. almond extract

If you like the taste of citron, add 1 teaspoon lemon or orange peel, dried.

Cream together the oil and the sugar. Add the egg. Then blend in the remaining ingredients. Drop by the spoonfuls onto a lightly oiled baking sheet. Bake in a preheated 350 degree oven for about 10 minutes. Cool on a wire rack and store in a tightly closed container. Makes about 36 cookies.

One cookie = 77 calories, 9 carbohydrates, 1 protein, 4 fat, 7 sodium, 70 potassium, and 8 cholesterol. Exchange: 1/2 fruit + 1 fat.
