FRIED PEPPERS 
8 lg. peppers (red & yellow) green or combination of three
1/3 c. olive oil or butter
1 clove minced garlic
Salt & pepper to taste

Wash and clean peppers. Cut in 1" squares. Heat oil or butter in large skillet. Add garlic, salt, pepper and peppers. Cook over medium heat, stirring constantly for 5 to 10 minutes, stirring occasionally. Don't allow peppers to become mushy.

Peppers can be served hot or cold. They are a good side dish for meat, sausage, rice or polenta.

Serves 6-8.
