CARROT CAKE 
2 c. sugar
4 eggs
1 c. oil
2 c. flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 c. grated carrots
1 c. applesauce
1 c. pecans

FROSTING:

2 1/2 c. powdered sugar
1/2 c. butter
1 (8 oz.) cream cheese
1 tsp. vanilla

Preheat oven to 350 degrees. Beat together the sugar, eggs and oil. Mix flour, baking powder, soda and cinnamon and salt; add to sugar mixture. Add carrots, applesauce and pecans. Stir until blended. Bake in 9 x 13 inch pan for 45 minutes.

Beat together frosting ingredients. Frost the cooled cake.
