ALMOST MEXICAN CHICKEN 
4 boneless chicken breast, salted and peppered
1 onion, sliced thin
1 bell pepper, sliced thin
1 tsp. garlic
1/4 tsp. cayenne pepper
1 can Rotel diced tomatoes

Place chicken breast in crock pot. Top with garlic, cayenne pepper, onion, bell pepper, and tomatoes. Cook on low until chicken is done. Serve on a bed of yellow rice.
