BANANA BREAD 
1 3/4 c. unbleached flour
2 1/4 tsp. baking powder
1/2 tsp. salt
1/3 c. shortening or softened butter
2/3 c. sugar
Grated rind of 1/2 lemon
2 eggs
2 bananas (can be overripe)
1 tsp. vanilla
1/2 c. broken nut meats

Sift dry ingredients except sugar. Blend together shortening and sugar; add lemon rind. In a separate bowl beat eggs and blend in bananas, mashing until smooth. Add bananas to butter. Stir in dry ingredients in three parts. Add vanilla and nuts. The batter will be thick.

Bake for 1 hour in an 8 1/2 x 4 1/2 pan at 350 degrees. Let cool some in pan. Turn onto cake rack to finish cooling before putting away.
