OVEN-FRIED GREEN TOMATOES 
1/3 c. cornmeal
1/3 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. pepper
4 med. size green tomatoes, cut into 1/2 inch slices
Vegetable cooking spray
1 tbsp. grated Parmesan cheese

Combine first 4 ingredients in a shallow dish; set aside. Dip tomato slices in water; dredge in cornmeal mixture. Place tomato slices on a baking sheet coated with cooking spray. Coat each slice with cooking spray. Bake at 400 degrees for 15 minutes; sprinkle with Parmesan cheese and bake an additional 5 minutes or until golden. Serve immediately.

To double the flavor of green tomatoes (either fried or baked)... sprinkle both sides of each slice... with "Lemon Pepper". I did this one time just as something different... It IS a keeper. Try it!
