PARMESAN STEAKS 
6 cube steaks (1 1/2 lbs.)
1/4 c. grated Parmesan
1 c. mashed potato flakes
3 eggs
1 clove garlic, minced
1 1/2 tsp. salt
1/2 tsp. pepper
1/3 c. oil
1 c. tomato sauce with cheese
1/4 c. grated Parmesan cheese

Combine 1/4 cup cheese with potato flakes. Beat eggs with garlic, salt and pepper. Dip steak in egg mixture, then into potato flakes. Brown in oil. Place in baking dish. Bake at 325 degrees for 15 minutes. Add tomato sauce and sprinkle with remaining 1/4 cup of cheese. Continue baking for 30 to 40 minutes.
