OVEN CHICKEN SALAD | |
1 c. thinly sliced celery 1 tbsp. chopped onion 2 c. cut up cooked chicken 3/4 c. sliced or slivered almonds 1/2 c. dairy sour cream 1/2 c. mayonnaise or salad dressing 1 tbsp. lemon juice 1/2 tsp. salt 1/4 tsp. ground sage 1/8 tsp. pepper 1/2 c. herb-flavored croutons 1/2 c. shredded sharp Cheddar cheese (about 2 oz.) 1. Place celery and onion in 1 1/2 quart casserole. Microwave at high (100%) until vegetables are tender-crisp, 2-4 minutes. Stir in remaining ingredients except croutons and cheese. Microwave at medium-high (70%) 5 minutes. If using oven other than Sharp Carousel, rotate casserole once during cooking time. Stir. Sprinkle with croutons and cheese. 2. Microwave at medium-high (70%) until casserole is hot and cheese is melted, 2-5 minutes. Makes 4-6 servings. |
