"MOCK CHICKEN" - MEAT STRETCHER DINNER | |
1 lb. ground beef 1 egg, separated Salt and pepper 4-6 tbsp. flour Place beef in bowl with egg white, salt, and pepper. Blend by hand. Makes 8 meatballs. Place or drop into boiling salted water - just enough to cover all meat. Cook about 10-15 minutes over medium heat (turn down if it comes to full boil). Remove pan from heat. Use slotted spoon; remove meat from water, leaving all SCUM in water. (The meatballs should look gray.) While meat is cooking, mix beaten egg yolk with flour, salt, and pepper; add a little cold water to make a thick paste. Slowly add paste to the meat water; return to lowest heat. Stir constantly until you have thickened gravy. Either return meatballs to gravy or pour it over meat. It is ready to serve. Serve over mashed potatoes, biscuits, noodles, or rice! Usually 2 meatballs per person is enough. Serves 4. |
