MACARONI SALAD 
3 c. cooked macaroni
3 cucumbers, sliced
1 lg. green pepper, chopped
1 sm. onion, sliced
Bacon bits
3 tomatoes, chopped
1/2 c. mayonnaise
1/4 c. cider vinegar
Salt & pepper to taste
8 oz. Cheddar cheese, grated

Combine macaroni and vegetables with mayonnaise and vinegar. Toss. Add salt and pepper to taste. Grate cheese on top. Add bacon bits just before serving.

Note: Use lo-cal mayonnaise to make a very lo-cal dish. Also, to serve as a casserole: Add diced turkey, chicken, ham.
