1/3 c. oil
1 c. brown sugar
1 egg
1 tsp. vanilla
1 c. flour
1 tsp. baking powder
1/8 tsp. baking soda
1 c. grated zucchini
1/2 c. chopped nuts

TOPPING:

8 oz. of butterscotch or peanut butter morsels

Mix oil and brown sugar together. Add egg and vanilla. Mix dry ingredients and add to sugar mixture. Stir in zucchini and nuts. Pour mixture into a 9 x 9 inch square pan. Bake at 350 degrees for 35 minutes.
