ZUCCHINI BREAD 
3 eggs
1 c. oil
1 1/2 c. sugar
3 c. flour (self-rising)
3/4 tsp. baking soda
1 tsp. cinnamon
1 c. raisins
1 c. chopped nuts
2 c. shredded zucchini, unpeeled
1 tsp. flavoring (optional)

Blend eggs, oil, and sugar together; add to flour mixture. Mix all together. Bake in loaf pan for 1 1/2 hours at 350 degrees.

Note: If plain flour is used, add 1 teaspoon salt and 1 teaspoon baking powder.
