1 c. chopped onions 2 c. diced zucchini 1 c. green beans 1 med. green bell pepper, seeded & diced 1 c. canned crushed tomatoes 1/2 c. water 1/2 tsp. oregano leaves Dash each salt & white pepper Spray large saucepan with Pam, add onions and saute until softened. Add zucchini, green beans and pepper, cook 5 minutes, stirring often. Add remaining ingredients and simmer, stirring occasionally for 10 minutes. (Measure single servings.) Single servings = 1 cup vegetable. |
