KNOCKWURST POTATO SOUP 
1 c. chopped onion
2 tbsp. butter
1/3 c. flour
1 3/4 c. chicken broth
3 c. raw diced potatoes (1 lb.)
1/8 tsp. pepper
12 oz. knockwurst, or smoked, or Polish sausage
1 c. milk
Chives and bacon bits for garnish

In large saucepan, melt butter, add onion and saute over low heat without browning for 3 minutes stirring occasionally. Remove from heat and stir in flour. Gradually stir in chicken broth. Add potatoes and pepper. Cover and cook 12 to 15 minutes. Cut sausage into 1/2 inch slices, cut into 1/3rd's. Set aside.

Pour 1/2 the soup into blender, blend at high speed or until smooth. Return to saucepan. Stir in sausage and milk. Simmer for 10 to 15 minutes. Garnish with chives and bacon.
