AUSTRIAN POTATO DUMPLINGS 
1 1/2 lbs. potatoes
2 tbsp. shortening
1 1/4 c. flour
1 egg
1 1/2 tbsp. salt
Pepper

Boil potatoes in jackets, peel and mash while still hot. Add the rest of the ingredients; mix well. Roll into balls, the size of a very small orange, using floured hands. While still warm drop into boiling water. Boil, covered for 10 minutes. Lift out with slotted spoon. Delicious with chicken and gravy. Makes about 6 generous servings.
