SWEET POTATO SOUFFLE 
3 c. cooked and mashed sweet potatoes
1/2 tsp. salt
2 eggs, beaten slightly
1/3 stick butter
1/2 c. sweet milk
1 tsp. vanilla

Mix all souffle ingredients together and pour into a greased baking dish.

TOPPING:

1/3 stick melted butter
1 c. brown sugar
1/3 c. flour
1 c. chopped pecans

Mix all topping ingredients together and spread over potato mixture. Bake at 350 degrees for 35 minutes.
