SHRIMP BISQUE 
12 oz. butter
12 oz. flour
8 oz. shrimp base
2 tsp. paprika
5 1/2 qt. hot water
1 1/2 qt. Half & Half
6 oz. sauterne wine
32 oz. cooked shrimp, cut into small pieces

Melt butter over low heat. Blend in flour. Add paprika. Beat with wire whisk. Stir over low heat 2 - 3 minutes, until well blended. Remove from heat. Add shrimp base and hot water, mixing well. Heat to boiling, stirring constantly. Reduce heat and simmer slowly for 10 minutes. Add Half & Half, wine and cooked shrimp; mix well. Heat until hot but DO NOT BOIL. Hold over hot water. Serve garnished with chopped fresh parsley or dried. Yields 2 gallons.
