KUFTA BI'L TOMATIN 
2 lb. ground lamb or beef
Coriander
Salt & pepper to taste
2 lb. tomatoes
1 lg. onion, chopped
4 tbsp. oil

Mix the spices into the meat. Shape mixture into flat round patties on the wet palm of your hand. Fry these in half the oil and set aside.

Fry chopped onion in remaining oil in a heavy pan until browned. Chop the tomatoes and add to the onion, cooking slowly for 20 minutes. Carefully put in the meatballs and continue to cook for another 20 minutes on low heat until the sauce thickens. Serve on a bed of boiled rice.
