CREOLE SAUCE 
3/4 tsp. leaf oregano, crumbled
1/2 tsp. salt
1/2 tsp. each white, cayenne and black peppers
1/2 tsp. paprika
1/2 tsp. leaf thyme, crumbled
1/2 tsp. leaf basil, crumbled
1/4 c. butter
1 c. chopped, peeled tomato
3/4 c. chopped onion
3/4 c. chopped celery
3/4 c. chopped green pepper
1 clove garlic, minced
2 bay leaves
1 1/4 c. chicken stock
1 tsp. sugar
1/2 tsp. liquid red pepper seasoning
1 c. tomato sauce

Combine oregano, salt, white pepper, cayenne pepper, black pepper, paprika, thyme and basil in a bowl.

Melt butter in large skillet over medium heat. Stir in tomato, onion, celery and green pepper. Add garlic, bay leaves and combined seasonings, stirring thoroughly. Cook until onion begins to soften, stirring occasionally. Stir in stock, sugar, red pepper seasoning and tomato sauce. Bring to a boil. Reduce heat and simmer until vegetables are tender, about 20 minutes, stirring occasionally. Remove bay leaves. Great with chicken or egg dishes.
