BARBECUED CHICKEN | |
1 (3 to 3 1/2 lb.) ready to cook young chicken, cut in pieces 2 med. onions, in 1/4 inch slices 1/2 c. chopped celery 1 c. ketchup 1 c. water 1/4 c. lemon juice 2 tbsp. brown sugar 2 to 3 tbsp. Worcestershire sauce 2 tbsp. vinegar Brown chicken slowly in hot salad oil. Remove chicken. Cook onion and celery in hot oil until tender but not brown; add remaining ingredients; season. Simmer 10 minutes. Place chicken in 11 x 7 x 1 1/2 inch baking dish. Pour sauce over. Bake, uncovered, at 325 degrees for 1 1/4 hours or until done. Makes 6 servings. |
