MECKLENBURG COUNTRY LEMON CHESS
PIE
 
1/2 c. butter
1 3/4 c. sugar
2 tbsp. flour
4 eggs, well beaten
Juice of 2 lemons
1 tbsp. lemon rind, grated
1 (9-inch) unbaked pie crust

Cream butter, sugar and flour together. Add eggs, lemon juice and rind. Pour into pie shell and bake at 350 degrees for 30-40 minutes. Serves 6-8.
