LENTIL AND RICE CASSEROLE 
3 c. chicken broth
3/4 c. dry lentils
3/4 c. chopped onion
1/2 c. regular or brown rice
1/2 tsp. dried basil, crushed
1/4 tsp. dried oregano, crushed
1/4 tsp. dried thyme, crushed
1/4 tsp. garlic powder
1/8 tsp. pepper
4 oz. any kind hard cheese
1 lb. ground turkey, browned optional

Combine chicken broth, lentils, onion, uncooked rice, and seasonings. Shred the cheese; stir into lentil mixture. Pour into 1 1/2 quart casserole dish. (Optional: stir the browned ground turkey into the mixture). Bake, covered, at 350 degrees for 1 1/2 to 2 hours or until lentils and rice are done, stirring twice. Makes about 4 servings.
